High Protein, Low Cal Cheesy Chicken Enchiladas

Ingredients
- 2 low-cal snack size tortillas
- 1 cup shredded chicken
- 1 laughing cow cheese wedge
- 2 tbsp salsa or pico
- 1 tbsp Mexican cheese
- 2 tbsp Greek yogurt (or sour cream)
- 1/2 tsp fajita seasoning
- 2 tbsp queso
- Quesadilla cheese
- Salad greens
- Sour cream
Instructions
- Mash the shredded chicken, laughing cow cheese, salsa, Mexican cheese, Greek yogurt, and fajita seasoning together in a bowl until combined.
- Divide the mixture evenly amongst the tortillas.
- Tuck the ends and roll tightly.
- Place the rolled burritos in a small baking dish.
- Top with queso and quesadilla cheese.
- Bake at 400°F for 10-15 minutes, or until hot and melty.
