High Protein Meal Prep Breakfast Egg Bake

Ingredients
- 8 eggs
- 1/4 cup crumbled feta cheese
- 1 cup frozen edamame (shelled)
- 1/4 cup chopped fresh parsley
- salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Line a baking dish with parchment paper.
- Crack 8 eggs into a bowl.
- Add 1/4 cup crumbled feta cheese, 1 cup shelled edamame, and 1/4 cup chopped fresh parsley to the bowl.
- Season with salt and pepper to taste.
- Whisk everything together until well combined.
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until the center is set and the top is golden brown.
- Let it cool slightly before cutting into portions for meal prep.
