  1. Preheat oven to 350°F (175°C). Line two ½ sheet pans (or jelly roll pans) with parchment and lightly grease.
  2. Whisk flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, beat butter and sugar 2–3 minutes until pale and fluffy.
  4. Add eggs one at a time. Mix in vanilla and almond extract.
  5. Alternating, add the dry ingredients and milk, beginning and ending with dry. Mix just until smooth (don’t overmix).
  6. Divide batter between pans, spread into an even ½-inch layer.
  7. Bake 10–15 minutes, or until set and a toothpick comes out clean.
  8. Cool completely before cutting.
