How to Cut and Freeze Pineapple

- 1 whole pineapple

- Cut the top and bottom off the pineapple to create a stable base.
- Stand the pineapple on its flat end and slice off the spiny skin from top to bottom, following the curve of the fruit. Aim to remove about 1/4 to 1/2 inch of flesh.
- Trim any remaining spines by hand. Be careful not to cut too deeply, as this will waste fruit.
- Stand the peeled pineapple on its end and cut it into quarters lengthwise.
- Locate the tough, fibrous core in the center of each quarter. Slice off about the last 1/2 inch of each quarter to remove the core.
- You should now have four peeled and cored pineapple quarters. Slice them lengthwise into spears, or cut them crosswise into chunks.
- To freeze, line a baking sheet with parchment paper and spread the pineapple chunks in a single layer, ensuring they do not touch.
- Freeze until solid.
- Once frozen, transfer the pineapple chunks to an airtight freezer-safe container or bag. Label and date the container.
