  1. Start with fresh, raw sesame seeds. Toasting the seeds amplifies their flavor.
  2. Place the sesame seeds in a dry skillet over medium heat. Cook, stirring continuously, for a few minutes until the seeds turn golden brown and fragrant. Be careful not to burn them.
  3. Immediately transfer the toasted seeds to a separate container to cool slightly.
  4. Once cooled, place the toasted seeds in a small food processor.
  5. Add about 1 tablespoon of neutral-flavored oil (like canola or sesame oil) to the food processor.
  6. Blend the seeds and oil, scraping down the sides as needed. The mixture will initially appear dry, but continue processing.
  7. Keep blending until the seeds break down and form a paste. This may take several minutes, depending on your food processor.
  8. Continue processing until you reach your desired consistency. Note that homemade tahini may have a slightly rough texture due to the sesame seed hulls.
  9. If desired, add a pinch of salt and blend briefly to combine.
  10. Transfer the tahini to an airtight container and store it in the refrigerator. It will last for a considerable amount of time, similar to natural peanut butter.
