How to Make Tahini

- 1 cup raw sesame seeds
- 1 tablespoon neutral flavored oil (like canola or sesame oil)

Instructions
- Start with fresh, raw sesame seeds. Toasting the seeds amplifies their flavor.
- Place the sesame seeds in a dry skillet over medium heat. Cook, stirring continuously, for a few minutes until the seeds turn golden brown and fragrant. Be careful not to burn them.
- Immediately transfer the toasted seeds to a separate container to cool slightly.
- Once cooled, place the toasted seeds in a small food processor.
- Add about 1 tablespoon of neutral-flavored oil (like canola or sesame oil) to the food processor.
- Blend the seeds and oil, scraping down the sides as needed. The mixture will initially appear dry, but continue processing.
- Keep blending until the seeds break down and form a paste. This may take several minutes, depending on your food processor.
- Continue processing until you reach your desired consistency. Note that homemade tahini may have a slightly rough texture due to the sesame seed hulls.
- If desired, add a pinch of salt and blend briefly to combine.
- Transfer the tahini to an airtight container and store it in the refrigerator. It will last for a considerable amount of time, similar to natural peanut butter.
