  1. Make the pesto by adding onion, garlic, ginger, green chilies, mint, coriander, sunflower seeds, olive oil, and water to a blender.
  2. Blend until smooth.
  3. Sauté chopped onions and garlic in olive oil.
  4. Add chopped tricolor peppers, mushrooms, and courgettes to the pan.
  5. Blanch carrots, beans, broccoli, and cauliflower in boiling water.
  6. Add the blanched vegetables to the sautéed vegetables.
  7. Boil the pasta.
  8. Add the pesto to the pan with the sautéed vegetables.
  9. Add the cooked pasta and blanched vegetables to the pan.
  10. Add some pasta water and double cream.
  11. Stir well and add grated mozzarella cheese.
  12. Mix until the cheese is melted.
  13. Serve the Indian-style pesto pasta.
