Instructions
- Make the pesto by adding onion, garlic, ginger, green chilies, mint, coriander, sunflower seeds, olive oil, and water to a blender.
- Blend until smooth.
- Sauté chopped onions and garlic in olive oil.
- Add chopped tricolor peppers, mushrooms, and courgettes to the pan.
- Blanch carrots, beans, broccoli, and cauliflower in boiling water.
- Add the blanched vegetables to the sautéed vegetables.
- Boil the pasta.
- Add the pesto to the pan with the sautéed vegetables.
- Add the cooked pasta and blanched vegetables to the pan.
- Add some pasta water and double cream.
- Stir well and add grated mozzarella cheese.
- Mix until the cheese is melted.
- Serve the Indian-style pesto pasta.
