Italian Penicillin Soup
Description: Italian penicillin is a nickname for patina soup, because it’s believed to make you feel better, since it’s packed with nourishing ingredients. It’s a perfect comfort food, and is often eaten to ward off a cold.
Ingredients
- 6 cups broth
- 4 carrots
- 2 stalks celery
- 1 onion
- 4 garlic cloves
- 2 sprigs Rosemary
- 1 cup pastina pasta
- juice from 1 lemon (optional)
- salt and pepper to taste
- 1 cup pasta
- fresh parsley
- Parmesan cheese
Instructions
- Combine broth, carrots, celery, onion, garlic and rosemary to a pot and bring to a boil.
- Reduce to a simmer and cook for 20-25 minutes.
- Remove the rosemary sprigs. Take out veggies along with 1 cup of broth and add to a blender; blend until smooth.
- Pour blended veggies back into the pot with the remaining broth and stir to combine. Season with salt, pepper and lemon juice (optional).
- In a separate pot, cook your pasta.
- Add cooked pasta to a bowl and pour the soup over it. Top with fresh parsley and Parmesan cheese.
