Lemon & Boursin Orzo Bake
Description: This is my easy Lemon and Boursin Orzo Bake that can be made all in one baking dish! It is loaded with creamy boursin cheese, orzo, and fresh lemon, making this the perfect easy and delicious weeknight meal that can be served on its own, or on the side of grilled chicken or shrimp.
Ingredients
- 1.5 cups orzo (uncooked)
- 2¾ cup chicken stock (salted)
- 1 boursin cheese (150 grams)
- 1/4 cup parmesan cheese (grated fine)
- 2 garlic cloves (minced)
- 2 tbsp fresh parsley (chopped fine)
- 1 lemon (half sliced into 5 pieces, and the other half juiced.)
- 1 tsp lemon zest
- pinch of salt and pepper
Instructions
- Preheat your oven to 425 °F.
- To a medium sized baking dish, add your boursin to the middle.
- Add your uncooked orzo around the boursin, and then pour in your chicken stock.
- Zest at least 1 tsp of lemon before slicing it in half. Slice the one half into 5 even slices and then add them to the orzo bake, and keep the other half to add once it's finished cooking.
- Add your garlic along with a pinch of salt and pepper to the orzo bake, cover with foil and let bake in the oven for 35-55 minutes.*Oven times will vary but once the orzo is cooked, and the liquid is absorbed you can remove it from the oven.
- Once its finished cooking, remove lemon slices, add your lemon zest, juice from the remaining half of your lemon, fresh parsley, and parmesan cheese. Mix to combine.
- Serve right away as is, or along side your favourite protein.
