Lemon Chicken Orzo Soup

Ingredients
- 1 tablespoon olive oil
- 1 cup chopped celery
- 1 cup chopped yellow onion
- 2 cloves minced garlic
- 1 teaspoon Italian seasoning
- 6 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded rotisserie chicken
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 tablespoon fresh lemon juice
- Fresh dill for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped celery and onion, and cook for 5-7 minutes until softened.
- Add minced garlic and Italian seasoning, and cook for 1 minute more until fragrant.
- Pour in chicken broth and season with salt and pepper.
- Bring to a simmer, then add shredded chicken and orzo pasta.
- Cook according to orzo package directions, or until tender (about 8-10 minutes).
- Stir in fresh spinach and lemon juice until spinach is wilted.
- Serve hot, garnished with fresh dill.
