Lemony Za’atar Arugula Salad

Ingredients
- 1 package (4 oz / 113 g) pre-washed baby arugula, chopped
- 4 cucumbers, finely chopped
- 1 fennel bulb, finely chopped
- 1 shallot, finely chopped
- 5 pitted Medjool dates, chopped
- 1 blood orange, cut into fillets
- Handful of chopped candied pecans
- 1/4 cup extra virgin olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 tablespoon za’atar
- 2 garlic cloves, minced
- Juice of 1 large lemon
- 1 teaspoon white vinegar
Instructions
- Mix the dressing ingredients in a small bowl until combined.
- Add all salad ingredients to a bowl.
- Pour the dressing over the salad.
- Toss well. Enjoy!
