Maple Miso Roasted Carrot Meal Prep
Description: This Maple Miso Roasted Carrot Meal Prep pairs some simple brown rice flavored with sesame oil, Sesame Kale, and Maple Miso Roasted Carrots into one flavorful and good-for-you box. The rich, almost butterscotch-like carrots go so well with the nutty rice and salty sesame kale. I know this is going to be a go-to combo for me in the future, especially since you can sub sweet potatoes for the carrots, and add a few other things to jazz it up even more if you want something extra.
Ingredients
- 2 lbs carrots, peeled and sliced into 1/2 inch thick coins
- 2 tablespoons olive oil
- 1 tablespoon white miso paste
- 1 tablespoon maple syrup
- 1 teaspoon soy sauce
- 1/2 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 bunch curly kale, stems removed and leaves torn
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 6 cups cooked brown basmati rice
- 1/2 teaspoon salt
- 1 tablespoon sesame oil
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together olive oil, miso paste, maple syrup, soy sauce, grated ginger, and minced garlic.
- Add the sliced carrots to the bowl and toss to coat evenly.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 30-40 minutes, or until tender and slightly caramelized, stirring halfway through.
- While the carrots are roasting, prepare the kale. Heat 1 teaspoon of sesame oil in a large skillet or pot over medium heat.
- Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
- Add the torn kale to the pot and stir to coat with the oil and garlic.
- Cover and cook for 3-5 minutes, or until the kale is wilted.
- Prepare the brown rice according to package directions. Once cooked, fluff with a fork and drizzle with 1 tablespoon of sesame oil. Gently fold to incorporate.
- To assemble the meal prep: Divide the cooked brown rice among four meal prep containers.
- Top the rice with equal portions of the maple miso roasted carrots and sesame kale.
- Allow to cool completely before covering and refrigerating.
