  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, miso paste, maple syrup, soy sauce, grated ginger, and minced garlic.
  3. Add the sliced carrots to the bowl and toss to coat evenly.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 30-40 minutes, or until tender and slightly caramelized, stirring halfway through.
  6. While the carrots are roasting, prepare the kale. Heat 1 teaspoon of sesame oil in a large skillet or pot over medium heat.
  7. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
  8. Add the torn kale to the pot and stir to coat with the oil and garlic.
  9. Cover and cook for 3-5 minutes, or until the kale is wilted.
  10. Prepare the brown rice according to package directions. Once cooked, fluff with a fork and drizzle with 1 tablespoon of sesame oil. Gently fold to incorporate.
  11. To assemble the meal prep: Divide the cooked brown rice among four meal prep containers.
  12. Top the rice with equal portions of the maple miso roasted carrots and sesame kale.
  13. Allow to cool completely before covering and refrigerating.
