Mexican Burrito
Description: A delicious Mexican burrito recipe.
Ingredients
- 1 onion
- 2 cloves garlic
- 1 bag of black beans
- 2 bay leaves
- 2 chicken breasts
- 1 lemon
- 2 tomatoes
- 1 red onion
- 1 avocado
- 2-3 large tortillas
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon olive oil
Instructions
- Prepare the black beans: Add the beans to a pot of boiling water with bay leaves. Cook until tender (time will vary based on method).
- Prepare the chicken: Season chicken breasts with lemon juice, minced garlic, salt, pepper, and chili powder. Sear in a pan with olive oil until cooked through.
- Prepare the pico de gallo: Dice tomatoes and red onion. Combine in a bowl and squeeze in lime juice.
- Cook the rice: Sauté minced onion and garlic in olive oil. Add rice and toast for a minute. Add water, salt, and bring to a boil. Cover and simmer until cooked.
- Shred or dice the cooked chicken.
- Dice the avocado.
- Assemble the burrito: Spread rice onto a tortilla. Top with black beans, chicken, pico de gallo, and avocado.
- Fold the tortilla to enclose the filling.
- Sear the burrito in a pan with a little oil until golden brown on all sides.
