Mexican Burrito

  1. Prepare the black beans: Add the beans to a pot of boiling water with bay leaves. Cook until tender (time will vary based on method).
  2. Prepare the chicken: Season chicken breasts with lemon juice, minced garlic, salt, pepper, and chili powder. Sear in a pan with olive oil until cooked through.
  3. Prepare the pico de gallo: Dice tomatoes and red onion. Combine in a bowl and squeeze in lime juice.
  4. Cook the rice: Sauté minced onion and garlic in olive oil. Add rice and toast for a minute. Add water, salt, and bring to a boil. Cover and simmer until cooked.
  5. Shred or dice the cooked chicken.
  6. Dice the avocado.
  7. Assemble the burrito: Spread rice onto a tortilla. Top with black beans, chicken, pico de gallo, and avocado.
  8. Fold the tortilla to enclose the filling.
  9. Sear the burrito in a pan with a little oil until golden brown on all sides.
