Mom's Cabbage Rolls

Ingredients
- 1.5 lbs ground pork, chicken or broken firm tofu
- A knob of ginger, grated
- 1 large clove of garlic, grated
- 1 shallot, diced finely
- Splash of mirin wine
- Heavy sprinkle of salt
- Ground pepper if you like it
- Prettiest Napa cabbage you can find, medium size
- Long chives or scallions
Instructions
- Wash then either steam (1-2 min) or microwave (2 min) the cabbage leaves until they are soft.
- Mix the ground pork (or chicken, or tofu, whatever you are using) with the Mirin wine, salt, shallot, garlic, and ginger.
- Place about one tablespoon of the mixture on the leaf and roll up to the stem.
- Wrap with chives or scallions. If you are using scallions, I recommend also steaming or microwaving them so they soften.
- Steam the rolls until the inside is cooked through, about 10-12 minutes on medium-high heat.
- Serve with rice or on anything else you want
