Nefi's Kebab (Homemade Doner)

Description: This is a family recipe for homemade doner kebab. It's much better than those dry meatloaf ones you often see. We start by blitzing a few onions and adding those to some minced meat with some yogurt, olive oil and a lot of seasoning to give it plenty of flavour. Then we're going to get all of that mixed together until it's a nice smooth consistency. We're going to take some parchment paper and get it nice and thin, roll it up and then get those on a baking tray and in the oven. About halfway through we're going to drain that liquid so it's not swimming. Then once it's done we're going to unravel it, top it with some lemon juice and get it back in the oven to make it a little bit crispy and then we're going to take it out and start serving in some pita breads. Can't say I'm the best at constructing kebabs, so I did mine and then got out of the way and let the master do the rest.

  1. Blend 2 onions until paste-like, then add to 1kg mince (beef, lamb or mix).
  2. Add about 50ml Olive Oil (less if you want healthier), 4 heaped tbsp yoghurt, 2 tbsp paprika, 2 tbsp pepper, 2 tbsp chilli flakes, 2 tbsp cumin, 2 tbsp Oregano, 1-2 tbsp salt.
  3. Mix together until smooth and well incorporated.
  4. Spread super thinly onto square sheets of parchment paper, should be only a few mm thick.
  5. Roll up tightly and repeat, then add to a baking tray and bake at 200 for 20 mins.
  6. Take out, drain excess liquid and bake again for another 15 minutes or until paper is going a dark brown.
  7. Remove, unravel, top with lemon juice and (optionally) bake for a further 5-10 mins to add some crisp.
  8. Serve with salad and Pita.
