Nimbu Pani

Ingredients
- 1 cup cold water
- 1-2 tablespoons lemon or lime juice
- 1 teaspoon kala namak (black salt)
- Ice cubes (optional)
- Seltzer instead of water
- Rock salt instead of kala namak
- Chaat masala
- Ground cumin
- Sugar, jaggery, or simple syrup (for sweetness)
Instructions
- Fill a glass with cold water.
- Squeeze in 1-2 tablespoons of lemon or lime juice.
- Sprinkle in 1 teaspoon of kala namak. (Note: it will fizz due to the sulfur in the salt, so leave some space in the glass).
- Stir the ingredients together.
- Taste and adjust the flavor as needed. You can add more lemon juice for sourness or kala namak for saltiness.
- Add ice cubes if desired.
