Nourishing Chicken Congee

Ingredients
- 4-6 chicken thighs (or breast)
- 1 cup jasmine rice
- Vegetables of choice (e.g., carrots)
- 1 thumb ginger, peeled and sliced
- Garlic (optional)
- Green onion
- Salt to taste
- Soy sauce
- Sesame oil
- Egg (optional topping)
- Chili crisp (optional topping)
Instructions
- Set Instant Pot to sauté mode, add oil, and brown chicken thighs for 3-5 minutes.
- Scrape the bottom of the pot and add 1 cup of water.
- Add sliced ginger, carrots, garlic (if using), and any other vegetables.
- Simmer for a few more minutes.
- Add 1 cup of jasmine rice and 5 cups of water. Stir.
- Close the lid and set the Instant Pot to manual mode for 30 minutes.
- After pressure cooking, let the pot sit for 20 minutes.
- Release steam, remove the lid, and take out the chicken.
- Stir the congee. If it's not thick enough, continue stirring and let sit for a few minutes. Add salt to taste.
- Separately, shred the chicken and add it back into the congee.
- Serve in a bowl, top with sliced green onion, sesame oil, soy sauce (if desired), egg (if using), chili crisp, or other preferred toppings.
