One Pot Chicken and Rice
Description: A delicious and budget-friendly one-pot chicken and rice dish.
Ingredients
- 2 skinless, boneless chicken thighs
- 1 tbsp sesame oil
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 cup basmati rice
- 2 cups water
- 1 tsp vegetable stock powder
- 1 tbsp sesame oil
- 1 tbsp light soy sauce
- 1/4 onion, diced
- 1 clove garlic, minced
- 1/2 tsp grated ginger
- Salt to taste
Instructions
- Marinate chicken thighs with sesame oil, light soy sauce, dark soy sauce, ground coriander, turmeric, minced garlic, and grated ginger. Let it marinate for at least 15 minutes.
- Rinse basmati rice until water runs clear.
- Add rice to a rice cooker, then add water and vegetable stock powder.
- Add sesame oil, light soy sauce, diced onion, minced garlic, grated ginger, and salt to the rice.
- Mix well.
- Place the marinated chicken on top of the rice, ensuring it's not fully submerged in the water.
- Cover the rice cooker and cook according to its instructions (usually about 20 minutes).
- Once cooked, fluff the rice and serve with the chicken.
- Garnish with fresh coriander and spring onions if desired.
