One Pot Chicken and Rice

  1. Marinate chicken thighs with sesame oil, light soy sauce, dark soy sauce, ground coriander, turmeric, minced garlic, and grated ginger. Let it marinate for at least 15 minutes.
  2. Rinse basmati rice until water runs clear.
  3. Add rice to a rice cooker, then add water and vegetable stock powder.
  4. Add sesame oil, light soy sauce, diced onion, minced garlic, grated ginger, and salt to the rice.
  5. Mix well.
  6. Place the marinated chicken on top of the rice, ensuring it's not fully submerged in the water.
  7. Cover the rice cooker and cook according to its instructions (usually about 20 minutes).
  8. Once cooked, fluff the rice and serve with the chicken.
  9. Garnish with fresh coriander and spring onions if desired.
