One Pot Vegan Lemon Pasta

Ingredients
- 2 cloves garlic
- 1 onion
- 1 tbsp olive oil
- 200 g whole wheat spaghetti
- 200 g spinach
- 30 g cashew butter
- 700 ml vegetable broth
- 30 g nutritional yeast
- Juice and zest of 1 organic lemon
- 1/4 tsp chili/chili flakes
- Salt/pepper
Instructions
- Chop the onion and sauté in olive oil until translucent.
- Chop the garlic and add briefly, then deglaze with vegetable broth and add spaghetti and cashew butter.
- Simmer for 10 minutes. Add spinach, nutritional yeast, as well as lemon juice and zest. Season with salt and pepper. Serve when the spinach has wilted and the pasta is cooked.
