  1. Cook orzo according to package directions. Drain and rinse with cold water. Transfer to a large bowl.
  2. Add chopped parsley, dill, red onion, green bell pepper, black olives, and feta cheese to the bowl with the orzo.
  3. In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper.
  4. Pour the dressing over the orzo mixture and toss to combine.
  5. To hard boil eggs: Place eggs in a saucepan and cover with 1 inch of water. Bring to a boil over high heat. Turn off heat, cover, and let sit for 15 minutes. Transfer to an ice bath for 15 minutes. Peel and slice.
  6. Divide the orzo salad among four meal prep containers. Top each container with sliced fresh mozzarella and two slices of hard-boiled egg.
  7. Store in the refrigerator for up to 4-5 days.
