Orzo Salad Meal Prep

Ingredients
- 1 pound orzo pasta
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh dill
- 1/4 cup chopped red onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped black olives
- 1/4 cup crumbled feta cheese
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large eggs
- 1 cup water
- 8 ounces fresh mozzarella
- 4 hard-boiled eggs
Instructions
- Cook orzo according to package directions. Drain and rinse with cold water. Transfer to a large bowl.
- Add chopped parsley, dill, red onion, green bell pepper, black olives, and feta cheese to the bowl with the orzo.
- In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper.
- Pour the dressing over the orzo mixture and toss to combine.
- To hard boil eggs: Place eggs in a saucepan and cover with 1 inch of water. Bring to a boil over high heat. Turn off heat, cover, and let sit for 15 minutes. Transfer to an ice bath for 15 minutes. Peel and slice.
- Divide the orzo salad among four meal prep containers. Top each container with sliced fresh mozzarella and two slices of hard-boiled egg.
- Store in the refrigerator for up to 4-5 days.
