Ingredients

  1. Sauté shallots and garlic in oil over medium heat until translucent and lightly caramelized.
  2. Add palm sugar and let it melt.
  3. Add tamarind paste and fish sauce.
  4. Simmer until the sugar is dissolved and the sauce has thickened slightly.
  5. Meanwhile, soak rice noodles according to package directions.
  6. Cook protein of choice (shrimp, chicken, tofu, or pork) and set aside.
  7. Stir-fry noodles with the sauce, protein, and vegetables (bean sprouts, garlic chives, preserved radish).
  8. Add eggs and scramble them into the noodles.
  9. Garnish with roasted peanuts and serve with lime wedges.
