Pad Thai

Ingredients
- 115g shallots
- 50g garlic
- 140g palm sugar
- 3/4 - 1 cup tamarind paste
- 1/2 cup fish sauce
- 115g dry rice noodles
- ~200g protein of your choice
- 10 stems garlic chives
- 2 1/2 cups bean sprouts
- 1/2 cup roasted peanuts
- 85g pressed tofu
- 2 Tbsp dried shrimp
- 2-3 Tbsp sweet preserved radish
- 2-3 Tbsp vegetable oil
- 2 eggs

Instructions
- Sauté shallots and garlic in oil over medium heat until translucent and lightly caramelized.
- Add palm sugar and let it melt.
- Add tamarind paste and fish sauce.
- Simmer until the sugar is dissolved and the sauce has thickened slightly.
- Meanwhile, soak rice noodles according to package directions.
- Cook protein of choice (shrimp, chicken, tofu, or pork) and set aside.
- Stir-fry noodles with the sauce, protein, and vegetables (bean sprouts, garlic chives, preserved radish).
- Add eggs and scramble them into the noodles.
- Garnish with roasted peanuts and serve with lime wedges.
