Peanut Butter Noodles with Halloumi {Satay-Style Stir Fry}

Ingredients
- 2 tsp Olive oil
- 1 Large onion (Sliced)
- 4 Peppers (Sliced)
- 450 g Halloumi (See notes)
- 250 g Egg noodles
- 2 Spring onions
- 50 g Salted peanuts (To garnish)
- 125 g Peanut butter
- 6 tbsp Soy sauce
- 3 tbsp Sweet chilli sauce
- 1 tsp Garlic puree
- 2 tbsp Honey
- Enough boiling water to make a smooth sauce
Instructions
- Heat half of the oil in a pan and pan fry the onions and peppers.
- Set aside. Heat the rest of the oil and pan-fry the halloumi until crisp.
- While it’s frying, cook the noodles according to the pack instructions.
- Mix the sauce ingredients and whisk until smooth.
- Combine everything together and stir really well.
- Sprinkle with spring onions and peanuts to serve.
