Peanut Butter Ramen
Description: This is my peanut butter ramen and it's my favourite dish to eat at the moment because it's slightly spicy, all made in one pan and absolutely delicious.
Ingredients
- 2 chicken breasts
- 2 tbsp oil
- 2 cloves garlic
- 1 tbsp red Thai curry paste
- 1 tbsp soy sauce
- 2 tbsp crunchy peanut butter
- 400ml coconut milk
- 500ml chicken stock
- Udon noodles
- Mange tout
- Coriander
- Lime wedges
- Chilli oil
- Sesame seeds
Instructions
- Place a couple of chicken breasts in a large saucepan with oil. Once golden on both sides, remove and set aside.
- Now for your peanut butter sauce, combine garlic, red Thai curry paste, soy sauce and crunchy peanut butter.
- Give it a good mix and then add your coconut milk and chicken stock.
- Stir until silky smooth.
- Add back in your chicken breasts and then remove once cooked.
- I added udon noodles to the broth because I love the chewiness, but you can add ramen noodles if you like.
- Serve up top with your chicken, mange tout, coriander, lime wedges, chilli oil and enjoy.
