Peanut Butter Ramen

Description: This is my peanut butter ramen and it's my favourite dish to eat at the moment because it's slightly spicy, all made in one pan and absolutely delicious.

  1. Place a couple of chicken breasts in a large saucepan with oil. Once golden on both sides, remove and set aside.
  2. Now for your peanut butter sauce, combine garlic, red Thai curry paste, soy sauce and crunchy peanut butter.
  3. Give it a good mix and then add your coconut milk and chicken stock.
  4. Stir until silky smooth.
  5. Add back in your chicken breasts and then remove once cooked.
  6. I added udon noodles to the broth because I love the chewiness, but you can add ramen noodles if you like.
  7. Serve up top with your chicken, mange tout, coriander, lime wedges, chilli oil and enjoy.
