Pesto Stuffed Shells Meal Prep

  1. Cook jumbo pasta shells according to package directions until al dente. Drain and set aside.
  2. Prepare the pesto: In a food processor, combine fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil. Process until smooth. Season with salt and pepper.
  3. In a bowl, combine ricotta cheese, egg, and about half of the prepared pesto. Mix well.
  4. Stir the remaining pesto into the marinara sauce.
  5. Preheat oven to 375°F (190°C).
  6. Stuff the cooked pasta shells with the ricotta-pesto mixture.
  7. Spread a thin layer of the pesto-marinara sauce on the bottom of a baking dish.
  8. Arrange the stuffed shells in the baking dish over the sauce.
  9. Pour the remaining pesto-marinara sauce over the stuffed shells.
  10. Cover the baking dish with foil and bake for 20 minutes.
  11. Remove the foil and bake for an additional 10-15 minutes, or until the shells are heated through and the sauce is bubbly.
  12. If making garlic bread, prepare it according to its recipe and bake alongside or after the stuffed shells.
  13. Allow to cool slightly before portioning into meal prep containers.
