Pesto Stuffed Shells Meal Prep

- Jumbo pasta shells
- Ricotta cheese
- Parmesan cheese
- Egg
- Fresh basil
- Garlic
- Pine nuts
- Olive oil
- Salt
- Pepper
- Marinara sauce
- Baguette
- Butter
- Garlic
- Parmesan cheese
- Parsley
Instructions
- Cook jumbo pasta shells according to package directions until al dente. Drain and set aside.
- Prepare the pesto: In a food processor, combine fresh basil, garlic, pine nuts, Parmesan cheese, and olive oil. Process until smooth. Season with salt and pepper.
- In a bowl, combine ricotta cheese, egg, and about half of the prepared pesto. Mix well.
- Stir the remaining pesto into the marinara sauce.
- Preheat oven to 375°F (190°C).
- Stuff the cooked pasta shells with the ricotta-pesto mixture.
- Spread a thin layer of the pesto-marinara sauce on the bottom of a baking dish.
- Arrange the stuffed shells in the baking dish over the sauce.
- Pour the remaining pesto-marinara sauce over the stuffed shells.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the shells are heated through and the sauce is bubbly.
- If making garlic bread, prepare it according to its recipe and bake alongside or after the stuffed shells.
- Allow to cool slightly before portioning into meal prep containers.
