Quick Chicken and Vegetable Stir-Fry

Ingredients
- 1 lb chicken breast, thinly sliced
- 1 tbsp cooking oil
- 1 head broccoli, cut into florets
- 2 carrots, julienned
- 2 tbsp soy sauce
- 1/2 lemon, juiced
- 1/4 red onion, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup cooked rice
- 1 tsp sesame seeds
- 1 jalapeño, sliced (optional)
Instructions
- Heat oil in a large skillet or wok over medium-high heat.
- Add chicken and stir-fry until browned and cooked through.
- Add broccoli florets and julienned carrots to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Pour soy sauce over the chicken and vegetables. Stir to combine.
- Squeeze fresh lemon juice over the stir-fry.
- Add sliced red onion and cherry tomatoes. Stir to incorporate.
- Serve the stir-fry over cooked rice.
- Garnish with sesame seeds and sliced jalapeño (if using).
