Roasted Vegetables
Description: Roasted vegetables are so versatile and can be used in so many different ways for a variety of dishes. Here is a recipe to create roasted vegetables to add to anything you like! Ingredients: 1 head cauliflower, cut into florets 3 carrots, peeled and sliced 1 can chickpeas, drained and rinsed 2 sweet potatoes, peeled and diced 1/2 cup olive oil 1 tsp turmeric 1 tsp curry powder 1/2 tsp chili powder 1/4 - 1/2 tsp red pepper flakes 1 tsp salt 1/2 tsp black pepper Instructions: 1. Preheat oven to 400 degrees F (200 degrees C). 2. In a large bowl, toss cauliflower florets, sliced carrots, rinsed chickpeas, and diced sweet potatoes with olive oil, turmeric, curry powder, chili powder, red pepper flakes, salt, and black pepper. 3. Spread the vegetables in a single layer on a baking sheet. 4. Roast for 25-30 minutes, or until vegetables are tender and slightly caramelized, flipping halfway through. 5. Serve as is, or use in your favorite dishes!
