Roscon de Reyes Pancakes

Ingredients
- flour
- sugar
- yogurt
- egg
- orange zest
- lemon zest
- olive oil
- orange blossom water
- orange slices
- sugar
- Cointreau (optional)
- whipped cream
- chopped almonds
- syrup
Instructions
- Whisk together dry ingredients (flour, sugar).
- In a separate bowl, mix egg, yogurt, olive oil, orange zest, lemon zest, and orange blossom water.
- Combine wet and dry ingredients, mixing until just combined. Do not overmix.
- Heat a lightly greased non-stick pan over medium-low heat.
- Scoop small portions of batter into the pan, allowing them to cook with a lid on until golden brown and cooked through.
- While pancakes are still warm, sprinkle with sugar.
- In a separate pan, caramelize orange slices in sugar. Optionally, flambé with Cointreau.
- Serve pancakes with whipped cream, chopped almonds, syrup, and candied orange slices.
