Röstis de patate douce
Description: Improvised lunch around these rösti. Improvisation sometimes has its good sides, because we feasted on this vegetarian meal. It must be said that it was without risk since we love sweet potatoes. This recipe is as simple as can be. What's really great is that you can enhance these rösti according to your desires (or what's in the fridge). In mine, in addition to a sweet potato, there was Greek yogurt and fresh cilantro. A perfect marriage.
Ingredients
- 1 sweet potato (350 g)
- 2 eggs
- 20 g flour
- 1 clove garlic
- a few sprigs of cilantro
- chili flakes
- salt
- olive oil
Instructions
- Peel the sweet potato and grate it with a coarse grater.
- In a bowl, add the eggs, flour, very finely grated garlic and chopped cilantro leaves. Mix well.
- Season with chili to your taste and salt.
- Pour a little oil into a large non-stick pan.
- Add a little of the mixture then press it down to give it a patty shape. I made 4 medium-sized rösti in 2 batches.
- Let the first side brown for about 3 minutes over medium heat, then gently flip to let the other side brown. Cook for a few more minutes.
- Serve hot with Greek yogurt and fresh cilantro.
