Sardinian Minestrone (Longevity Soup)
Description: One of the healthiest recipes, based on how the Sardinians make it (longevity soup). Reheats well.
Ingredients
- 50g olive oil
- 1 onion
- 200g carrot
- 200g celery
- 600g potato
- 2 x 400g tinned tomatoes
- 1 tin red kidney beans
- 100g pearl barley
- Parsley
- Basil
- 70g Parmesan
Instructions
- Add ingredients in sequence, with a few minutes between each.
- Simmer once everything is in for at least 20 minutes.
- Finish with salt, pepper and Parmesan cheese.
