Satay Chicken
Description: A delicious and easy satay chicken recipe perfect for a family meal.
Ingredients
- 800g chicken thigh
- 1 tbsp sugar
- 1 tbsp curry powder
- 1 tsp salt
- 1/4 cup coconut milk/cream (lite coconut milk used)
- 1 tsp - 1 tbsp red curry paste (depending on spice preference)
- 1/4 cup brown sugar
- 150g peanut butter
- 1 tbsp white sugar
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp rice wine vinegar
- 1 cup of coconut milk/cream (lite coconut milk used)
Instructions
- Marinate the chicken thighs with sugar, curry powder, salt, and coconut milk.
- Prepare the sauce by combining red curry paste, brown sugar, peanut butter, white sugar, light soy sauce, dark soy sauce, rice wine vinegar, and coconut milk.
- Cook the marinated chicken with your choice of vegetables.
- Serve the satay chicken with rice and crushed peanuts.
