Shredded Cheesy BBQ Chicken Flatbreads

Ingredients
- 200g chicken breast, cut into strips
- 1 tsp BBQ seasoning
- 1 tsp smoked paprika
- 50g BBQ sauce
- 2 flatbreads (protein ones recommended)
- 25g red Leicester cheese, grated (or reduced-fat cheddar)
- 15g ranch dressing (@newmansownuk)
- 1 tsp crispy onions
- Rocket (for serving)
Instructions
- Season the chicken with BBQ seasoning and smoked paprika.
- Add the seasoned chicken to a frying pan and cook for 8-9 minutes until cooked through.
- Remove the chicken from the pan and shred it using two forks or an electric hand whisk.
- Once shredded, stir the BBQ sauce into the chicken.
- Cook the flatbreads according to packet instructions.
- Spread the BBQ chicken onto one half of each flatbread and top with grated cheese.
- Place the flatbreads under a grill for a couple of minutes until the cheese is melted.
- Remove from the grill, add rocket to the flatbreads.
- Drizzle with ranch dressing and sprinkle with crispy onions before serving.
