Shredded Tofu Tacos!
Description: The age old question: "How to make tofu taste good?" This is my simplest yet most delicious answer: Shredded tofu tacos that will convince even the biggest tofu skeptics! Ingredients: For the shredded tofu: * 2 blocks firm tofu * 1-2 tbsp oil * 2 tbsp soy sauce * 1 tsp paprika * salt For the salsa verde: * 1 cup parsley * 2 cloves garlic * 1/2 lemon, juiced * 1 tsp cumin For the taco filling: * 1 onion, thinly sliced * 2 cloves garlic, minced * 1 tsp cumin * 1 tsp paprika * 1/2 tsp chili powder (optional) * 2 tbsp tomato paste * 1/4 cup pineapple juice * 1 tbsp soy sauce * Tortillas * Toppings of your choice (pico de gallo, avocado, etc.) Instructions: 1. Take firm tofu from the package & simply pat dry it (I'm too lazy to press it). Then shred the tofu. 2. Add some oil, soy sauce, paprika, and salt to the shredded tofu and toss it around. 3. Spread on a lined baking tray and bake for a better texture. 4. For the salsa verde, blend parsley, garlic, lemon juice, and cumin. 5. Next, heat up some oil in a pan and sauté onion and garlic. Add some more cumin, paprika, and if you want, some chili powder. 6. Add tomato paste, then deglaze it with pineapple juice and just a little touch of soy sauce. Let it bubble until the tofu is ready. 7. Assemble your tacos with the shredded tofu, salsa verde, and your favorite toppings.
