Simple Chicken and Egg Dish

Ingredients
- 1 onion
- 4 cloves garlic
- 3 chilies
- 3 tomatoes
- 500 grams chicken breasts, cubed
- 3 eggs
- salt
- pepper
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp optional chili powder
- olive oil
Instructions
- Finely chop the onion, garlic, chilies, and tomatoes.
- Sauté the chopped vegetables in a drizzle of olive oil until wilted.
- Add the cubed chicken breasts and spices (cumin, coriander, turmeric, chili powder, salt, pepper).
- Cover and let the chicken cook for 5-7 minutes on medium-low heat.
- Crack the eggs on top of the chicken mixture. You can leave them sunny-side up or scramble them.
- Cover the pan and let the eggs cook to your desired doneness.
- Drizzle with a bit more olive oil and sprinkle with black pepper.
- Serve with a loaf of bread and a cup of tea.
