  1. Finely chop the onion, garlic, chilies, and tomatoes.
  2. Sauté the chopped vegetables in a drizzle of olive oil until wilted.
  3. Add the cubed chicken breasts and spices (cumin, coriander, turmeric, chili powder, salt, pepper).
  4. Cover and let the chicken cook for 5-7 minutes on medium-low heat.
  5. Crack the eggs on top of the chicken mixture. You can leave them sunny-side up or scramble them.
  6. Cover the pan and let the eggs cook to your desired doneness.
  7. Drizzle with a bit more olive oil and sprinkle with black pepper.
