  1. Sear the chuck roast in a hot cast iron skillet with a little oil.
  2. Season the chuck roast with Montreal steak seasoning.
  3. Sear all sides of the chuck roast until browned.
  4. Remove the roast from the skillet and set aside.
  5. Add butter to the skillet and let it melt.
  6. Add chopped onion and carrots to the skillet and sauté.
  7. Add pepperoncini peppers and their juice to the skillet.
  8. Add beef stew seasoning, au jus gravy seasoning, and ranch seasoning.
  9. Add tomato sauce and water to fill the can about halfway, then pour into the skillet.
  10. Stir everything together and let it simmer for about 5 minutes.
  11. Place the seared chuck roast into the slow cooker.
  12. Pour the gravy mixture over the roast in the slow cooker.
  13. Cover the slow cooker and cook on high for 8 hours.
  14. Serve the shredded pot roast over mashed potatoes.
