Slow Cooker Pot Roast
Description: A slow cooker recipe for a delicious pot roast.
Ingredients
- 4 pound chuck roast
- Montreal steak seasoning
- 1 tablespoon oil
- 1 stick butter
- 1 large onion, chopped
- 3 cups carrots, chopped
- 16 ounce jar pepperoncini peppers
- 1 packet beef stew seasoning
- 1 packet au jus gravy seasoning
- 1 packet ranch seasoning
- 15 ounce can tomato sauce
- water
- mashed potatoes
Instructions
- Sear the chuck roast in a hot cast iron skillet with a little oil.
- Season the chuck roast with Montreal steak seasoning.
- Sear all sides of the chuck roast until browned.
- Remove the roast from the skillet and set aside.
- Add butter to the skillet and let it melt.
- Add chopped onion and carrots to the skillet and sauté.
- Add pepperoncini peppers and their juice to the skillet.
- Add beef stew seasoning, au jus gravy seasoning, and ranch seasoning.
- Add tomato sauce and water to fill the can about halfway, then pour into the skillet.
- Stir everything together and let it simmer for about 5 minutes.
- Place the seared chuck roast into the slow cooker.
- Pour the gravy mixture over the roast in the slow cooker.
- Cover the slow cooker and cook on high for 8 hours.
- Serve the shredded pot roast over mashed potatoes.
