Snickers Protein Balls

  1. In a food processor, combine the peanut butter, dates, oats, peanuts, protein powder, maple syrup, vanilla extract, and salt. Process until well combined. Form the mixture into balls, about 1 tablespoon per ball.
  2. Add the chocolate chips and coconut oil to a small microwave safe bowl. Place in the microwave and heat in 30 second intervals until smooth.
  3. Line a baking sheet or tray with parchment paper. Dip the balls into the chocolate and place on the prepared baking sheet.
  4. Sprinkle the tops with chopped peanuts and a little flaky sea salt. Place the balls in the refrigerator for about 1 hour, or until the chocolate hardens. Tp speed up the process, you can put them in the freezer for 15 minutes or until chocolate is set. Enjoy!
