  1. For the Spaghetti with Vegetable Meat Sauce: Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the ground meat to the pot and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. While the meat is browning, finely shred the carrot and zucchini using a cheese grater. Add the shredded carrot and zucchini to the pot with the meat and onions.
  4. Stir in the crushed tomatoes, tomato sauce, water or broth, oregano, basil, salt, pepper, and red pepper flakes (if using).
  5. Bring the sauce to a simmer, then reduce heat to low, cover, and let it simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld.
  6. For the Oven Roasted Frozen Broccoli: Preheat your oven to 400°F (200°C).
  7. Spread the frozen broccoli florets in a single layer on a large baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with Montreal Steak Seasoning (or your chosen blend), salt, and pepper.
  8. Roast for 20-30 minutes, or until the broccoli is tender and slightly browned. For meal prep, consider roasting for closer to 20 minutes to prevent overcooking when reheating.
  9. Cook the spaghetti according to package directions. Drain well.
  10. To assemble the meal prep containers: Divide the cooked spaghetti among 4-6 meal prep containers. Top with a generous portion of the vegetable meat sauce. Add a serving of roasted broccoli to each container. Sprinkle with Parmesan cheese if desired.
  11. Allow the meals to cool completely before sealing the containers and refrigerating or freezing.
