Chicken & Veggie Noodles: INGREDIENTS FOR THE SAUCE: 1/4 cup peanut butter 2 tbsp soy sauce 1 tbsp rice vinegar 1 tbsp sesame oil 1 tbsp honey 1 tbsp chili garlic sauce 1 clove garlic, minced FOR THE NOODLES: 8 oz spaghetti 1 tbsp vegetable oil 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces 1 red bell pepper, thinly sliced 1 cup broccoli florets 1/2 cup shredded carrots 1/4 cup chopped cilantro, for garnish 1/4 cup chopped peanuts, for garnish INSTRUCTIONS 1. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, chili garlic sauce, and garlic. Set aside. 2. Cook spaghetti according to package directions. Drain and rinse with cold water. Set aside. 3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. 4. Add red bell pepper and broccoli florets to the skillet and cook until tender-crisp, about 3-4 minutes. Add shredded carrots and cook for 1 minute more. 5. Add the cooked spaghetti and peanut sauce to the skillet. Toss to combine and heat through, about 2-3 minutes. 6. Garnish with cilantro and peanuts before serving. Enjoy!
