Spicy Sausage and Broccolini Orecchiette
Description: A quick and delicious pasta dish with sausage and broccolini.
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 pound broccolini, chopped
- 1 pound orecchiette pasta
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
- Add onion and cook until softened, about 3 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Add broccolini and cook until tender-crisp, about 5 minutes.
- Meanwhile, cook orecchiette pasta according to package directions.
- Drain pasta, reserving about 1 cup of pasta water.
- Add cooked pasta to the pot with the sausage and broccolini.
- Pour in chicken broth and stir to combine.
- Stir in Parmesan cheese and butter until melted and creamy.
- Add reserved pasta water as needed to reach desired consistency.
- Season with salt and pepper to taste.
- Serve immediately.
