Steak Frites for Two

Ingredients
- 2 ribeye steaks
- Salt
- Pepper
- Steak seasoning of choice
- 1 large russet potato
- Salt
- Fresh grated parmesan
- Fresh parsley
- 1/2 stick unsalted butter
- 2-3 garlic cloves, smashed
- Rosemary sprig
- 1/2 stick unsalted butter
- Half a shallot, diced
- 1 clove garlic, minced
- Juice of half a lemon
- 1/4 cup heavy cream
- Steak drippings
- Salt to taste
- Pepper to taste
Instructions
- Season ribeye steaks on each side and set aside to come to room temperature.
- Dice the shallot and mince 1 clove of garlic. Clean the russet potatoes and cut them into slabs about 1-2 inches thick. Cut the slabs into a long fry shape, then cut those into 4s to make shoestring fries.
- Place the cut fries in ice-cold water for 20 minutes, then pat them dry.
- Sear the steaks for 5-7 minutes per side, or until a nice golden crust forms. Once both sides are golden, add half a stick of butter, smashed garlic cloves, and a rosemary sprig to the pan. Baste the steaks with the butter.
- Remove the steaks from the pan, pour the pan butter over the steaks, and let them rest.
- For the fries, fry in hot oil until they float to the top. Remove to a paper-lined plate and then double fry for a few seconds until golden brown. Remove once golden.
- In the same pan used for searing the steaks, add the remaining half stick of butter, diced shallots, and minced garlic. Deglaze with lemon juice. Add heavy cream, salt, and pepper to taste. Add the steak drippings to the sauce and mix until combined.
- Salt the fried fries and add fresh grated parmesan with chopped parsley. Toss to combine.
- Plate the steak and fries, drizzle with sauce, and enjoy.
