Strawberry Cheesecake Croissants

Ingredients
- 228 g cream cheese (8 oz)
- 55 g granulated sugar (1/4 cup)
- 60 g heavy cream (1/4 cup)
- 1 tsp vanilla extract
- 170 g fresh strawberries, chopped (1 cup chopped)
- 35 g granulated sugar (2 1/2 tbsp)
- 1/2 tsp lemon juice
- 4 fresh croissants
- 6 fresh strawberries, sliced
- Powdered sugar for dusting
Instructions
- Make the Cheesecake Filling: Beat cream cheese + sugar until smooth. Add heavy cream + vanilla and whip until creamy. Chill while preparing the rest.
- Make the Strawberry Compote: In a small saucepan, combine chopped strawberries, sugar, and lemon juice. Cook on medium heat for 5–7 minutes until thickened and glossy. Let cool completely.
- Assemble: Slice each croissant lengthwise (don’t cut all the way through). Fill with the cheesecake mixture. Spoon in some strawberry compote. Add fresh sliced strawberries. Dust with powdered sugar and serve.
