  1. Make the Cheesecake Filling: Beat cream cheese + sugar until smooth. Add heavy cream + vanilla and whip until creamy. Chill while preparing the rest.
  2. Make the Strawberry Compote: In a small saucepan, combine chopped strawberries, sugar, and lemon juice. Cook on medium heat for 5–7 minutes until thickened and glossy. Let cool completely.
  3. Assemble: Slice each croissant lengthwise (don’t cut all the way through). Fill with the cheesecake mixture. Spoon in some strawberry compote. Add fresh sliced strawberries. Dust with powdered sugar and serve.
