Stuffed Bell Peppers with Egg Salad

Ingredients
- 5 hard-boiled eggs
- Cottage cheese
- Curry powder
- Sea salt
- White pepper
- Garlic powder
- Smokey sriracha hot chili sauce
- 1 red bell pepper
Instructions
- Boil eggs and peel them. It's easier to peel them in water.
- Mash the hard-boiled eggs with cottage cheese, curry powder, sea salt, white pepper, garlic powder, and smokey sriracha hot chili sauce.
- Cut the red bell pepper in half lengthwise and remove the seeds.
- Fill the bell pepper halves with the egg and cottage cheese mixture.
- Drizzle with extra sriracha sauce if desired.
- Transfer any remaining filling to a container for future use.
- Serve and enjoy!
