  1. Prepare the Cilantro Lime Chicken Drumsticks according to their specific recipe.
  2. Prepare the Taco Rice according to its specific recipe.
  3. Rinse and drain one can of black beans.
  4. Combine the rinsed black beans with about 1.5 cups of frozen fire roasted corn kernels in a bowl.
  5. Season the corn and bean mixture with a pinch of salt and a light sprinkle of cumin.
  6. Divide the Cilantro Lime Chicken Drumsticks, Taco Rice, and Corn & Black Bean Mix into meal prep containers. Aim for approximately 1 drumstick, 3/4 cup corn/bean mix, and 1-1.5 cups of rice per container.
  7. If making more than 4 servings of rice, portion out the extra rice and freeze it quickly after cooling.
  8. If not using bone-in chicken for freezing, consider freezing portions of chicken breasts separately. Cooked bone-in meat does not reheat as well.
  9. Top with optional green onions and serve with a lime wedge for squeezing over the meal.
