Sunday Meal Prep: Cilantro Lime Chicken Meal

Ingredients
- Cilantro Lime Chicken Drumsticks (recipe makes 4-6 drumsticks)
- 4 cups Taco Rice (recipe makes ~6 cups)
- 1 can black beans, rinsed and drained (about 1.5 cups)
- Frozen fire roasted corn kernels (about 1.5 cups)
- Pinch of salt
- Light sprinkle of cumin
- Optional: Green onions (from Taco Rice)
- Optional: Lime wedges (from Cilantro Lime Chicken)
Instructions
- Prepare the Cilantro Lime Chicken Drumsticks according to their specific recipe.
- Prepare the Taco Rice according to its specific recipe.
- Rinse and drain one can of black beans.
- Combine the rinsed black beans with about 1.5 cups of frozen fire roasted corn kernels in a bowl.
- Season the corn and bean mixture with a pinch of salt and a light sprinkle of cumin.
- Divide the Cilantro Lime Chicken Drumsticks, Taco Rice, and Corn & Black Bean Mix into meal prep containers. Aim for approximately 1 drumstick, 3/4 cup corn/bean mix, and 1-1.5 cups of rice per container.
- If making more than 4 servings of rice, portion out the extra rice and freeze it quickly after cooling.
- If not using bone-in chicken for freezing, consider freezing portions of chicken breasts separately. Cooked bone-in meat does not reheat as well.
- Top with optional green onions and serve with a lime wedge for squeezing over the meal.
