Sunday Meal Prep: Falafel and Hummus Box

Ingredients
- 8 Homemade Falafel
- 1 batch Homemade Hummus
- 1/2 recipe Super Fresh Salad
- 2 whole wheat pita (1/2 pita per box)
Instructions
- Prepare the Homemade Falafel according to the recipe. This recipe makes more than eight pieces, so any leftovers can be frozen for later.
- Prepare the Homemade Hummus according to the recipe.
- Prepare the Super Fresh Salad. The original recipe is quite large, so for four boxes, it's suggested to cut the recipe in half.
- Divide the falafel, hummus, and cucumber salad among four meal prep containers. Aim for approximately 2 falafel pieces, a portion of hummus, and a serving of salad per container.
- Add half a pita wedge to each container. It's recommended to wrap the pita separately in a small sandwich bag or place it on top of the other contents, separated by parchment paper, to prevent it from getting soggy.
- If desired, add feta cheese to the cucumber salad for those who are not making a vegan version. To make the box vegan, skip the feta cheese.
- Optional: If you have leftover red onion after making the falafel and hummus, consider making a quick batch of pickled red onions to add to the box.
- Optional: If you have leftover cilantro, consider making a jalapeño cilantro flavored hummus to use it up.
