  1. Prepare the Homemade Falafel according to the recipe. This recipe makes more than eight pieces, so any leftovers can be frozen for later.
  2. Prepare the Homemade Hummus according to the recipe.
  3. Prepare the Super Fresh Salad. The original recipe is quite large, so for four boxes, it's suggested to cut the recipe in half.
  4. Divide the falafel, hummus, and cucumber salad among four meal prep containers. Aim for approximately 2 falafel pieces, a portion of hummus, and a serving of salad per container.
  5. Add half a pita wedge to each container. It's recommended to wrap the pita separately in a small sandwich bag or place it on top of the other contents, separated by parchment paper, to prevent it from getting soggy.
  6. If desired, add feta cheese to the cucumber salad for those who are not making a vegan version. To make the box vegan, skip the feta cheese.
  7. Optional: If you have leftover red onion after making the falafel and hummus, consider making a quick batch of pickled red onions to add to the box.
  8. Optional: If you have leftover cilantro, consider making a jalapeño cilantro flavored hummus to use it up.
