Ingredients
- 45 grams dry Black Lentils (~150 grams cooked)
- 250 grams Broccoli (Head+Stalk)
- 150 grams Cauliflower
- 50 grams Shiitake or Maitake Mushrooms
- 1 clove Garlic
- 3 grams Ginger Root
- 1 Lime
- 1 Tbsp Cumin
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp Hemp Seeds
- Extra Virgin Olive Oil (drizzled after preparation)
Instructions
- Weigh and Wash: Start with the right proportions of fresh vegetables.
- Steam: Place broccoli, cauliflower, mushrooms, ginger, and garlic in steamer. Steam until tender (7-9 min).
- Boiling: Bring water to a boil, add lentils, and cook until al dente (18-20 minutes).
- Rinsing: Drain and rinse under cold water to stop the cooking process.
- Combining: In a blender, add cumin, apple cider vinegar, lime, cooked lentils, and cooked vegetables.
- Blending: Blend to your preferred consistency, from smooth to chunky.
- Garnishing: Top with hemp seeds for added texture and nutrition.
- Seasoning: Finish with a drizzle of Extra Virgin Olive Oil and dark chocolate for a unique flavor.
