The Perfect Raclette Guide
Description: The raclette, which we describe as a gourmet and friendly dish originating from the Swiss mountains in the Middle Ages, is also a type of cheese that happens to be the star of the dish of the same name. A semi-firm cheese with a bold taste that melts very well, without burning too much. Also originating from Switzerland, in the canton of Valais, raclette cheese is now produced here in Quebec. That being said, other aged or flavored cheeses of all kinds can very well accompany raclette. From aged cheddar to smoked gouda to camembert, we remain in control of what we like when it comes to a good homemade raclette.

Instructions
- Traditionally, this meal consists of steamed potatoes, cold cuts, various meats, and marinated vegetables such as gherkins. But remember: happiness is also found in experimentation!
- Add game meats or fish and seafood for land and sea inspirations, or marinated tofu and tempeh for a veggie raclette.
- At RICARDO, we love to garnish everything with vegetables! Blanch the firmer ones and thinly slice the softer ones to allow all foods optimal cooking in both the pan and on the grill.
- Finally, don't forget the sauces for the proteins, bread, and why not some nuts, marinades, and crudités. A nice green salad is also welcome.
- For quantities, as indicated, we're talking about 200g of cheese per person. Don't forget to slice it in advance or buy pre-sliced cheese!
- Depending on appetites, consider between 90g and 150g of protein per person and about 250g of vegetables per person, not forgetting a few slices of bread (baguette or other).
- To use up any leftovers, you can make grilled cheese sandwiches using the previous night's raclette ingredients between two slices of bread.
- Alternatively, make simple skewers with leftover ingredients and bake them.
- Raclette is also perfect for extending weekend brunches with gourmet recipes: small blueberry pancakes, cheddar and chorizo omelets, Provençal tomatoes, maple breakfast sausage patties.
