The Quick Fix Salad Bar Pizza
Description: When a pizza craving strikes, hit the salad bar to make these super fast Salad Bar Pizzas.
Ingredients
- 2 flour tortillas (7 or 8 inch, $0.36)
- 1/2 cup shredded mozzarella ($0.46)
- 1 cup mixed vegetables from a salad bar ($0.84)
- 1 pinch Italian seasoning (or red pepper flakes (optional), $0.05)
Instructions
- Preheat the oven to 400 degrees. Place the tortillas on a baking sheet or pizza pan. Bake for 5 minutes, or until golden brown. If the tortilla puffs up or develops a bubble, poke it with a sharp knife and press down to flatten.
- Chop or break up the vegetables into small, bite-sized pieces. Sprinkle about 1/4 cup shredded cheese over each tortilla, then top with the vegetables and a sprinkle of Italian seasoning or red pepper flakes.
- Bake the topped pizzas for 5 more minutes, or until the cheese is fully melted and the edges of the pizzas are slightly darker brown.
