  1. Heat a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. Stir in the tomato paste, nutritional yeast, and thyme. Cook for 1 minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the rinsed and drained cannellini beans and chopped kale.
  5. Stir well and continue to simmer for about 10-15 minutes, or until the kale is wilted and tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with red pepper flakes and fresh parsley, if desired.
