Tuscan White Bean Soup

Ingredients
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 (6-ounce) can tomato paste
- 2 tablespoons nutritional yeast
- 1 teaspoon dried thyme
- 4 cups vegetable broth
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 4 cups chopped kale
- Red pepper flakes, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Cook until softened, about 8-10 minutes.
- Stir in the tomato paste, nutritional yeast, and thyme. Cook for 1 minute until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the rinsed and drained cannellini beans and chopped kale.
- Stir well and continue to simmer for about 10-15 minutes, or until the kale is wilted and tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with red pepper flakes and fresh parsley, if desired.
