Warm Roasted Cabbage Salad

Ingredients
- 1 green cabbage, cut to thin slices
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1/4 teaspoon of ground black pepper
- 5 tablespoons of olive oil
- 3 garlic cloves
- 1 jalapeño without the seeds
- Handful of parsley leaves
- 1/2 cup of raw cashews
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 1/4 cup of tahini
- Juice from 1/2 lemon
- 1/2 cup of cold water
- 1/4 teaspoon of sumac
Instructions
- Put all the dressing ingredients in a small food processor and process to a smooth dressing.
- Preheat the oven to 420F / 220C.
- On a baking pan with parchment paper put the sliced cabbage.
- Add the seasoning (salt, garlic powder, black pepper) and mix it well with your hands.
- Spread the cabbage evenly on the baking sheet.
- Bake it in the oven on 420F for 25 minutes.
- Transfer to convection broil on 450F for 7-8 minutes until the cabbage is golden and crisp.
- Put the roasted cabbage in a nice bowl.
- Pour the dressing on top and garnish with sumac.
